A potluck crowd pleaser! Sweet, nutty, crispy and crunchy. A dense 5 vegetable salad with apple cider vinegar—peanut dressing. Eating this salad can contribute to groundedness and safety (red, root chakra); healthy sexuality (orange, sacral chakra); unconditional love (green, heart chakra); calm & focus (purple, third eye chakra).
It is important to use dressings with healthy oils, which will increase your body’s ability to utilize the nutrition in the raw vegetables and fat-soluable vitamins, A,D,E,K. The oils in this salad are all balanced, coming from a wonderful combination of nuts, seeds and avocados.
The dressing “makes” this salad, and it only 30 calories per tablespoon!
Recipe:
Chopped Vegetables:
4 C purple cabbage, chopped or finely shredded
1 red pepper, diced
5 scallions, mostly green parts, chopped
2 carrots, grated
Dressing:
Whisk together:
1/4 C raw, crunchy peanut butter (may use almond butter)
1/4 C coconut water (may use water)
1/2 C raw apple cider vinegar (may use rice vinegar)
Then add:
3 Tbs raw honey
1 tsp salt
1 Tbs Tamari (gluten free soy sauce)
1 Tbs raw sesame oil
Mix together vegetable and top with dressing. May top with raw sunflower seeds, unsweetened coconut flakes, and/or diced avocado.
Nutrition: 2 C salad w/1 Tbs coconut water, 1 Tbs sunflower seeds, 1/4 diced avocado, 3 Tbs dressing = 295 cal, 19g fat, 16g sugar, and 9g protein.
